Pappardelle Pasta Recipe with Tomatoes On The Vine

Ingredients

  • 8 oz pappardelle pasta

  • 1 Pint cherry tomatoes (on the vine, if possible)

  • 1 Container of baby portobello mushrooms, sliced

  • 1 small white onion, finely chopped

  • Olive oil

  • 1/2 tsp sea salt (or to taste)

  • 1/2 tsp black pepper

  • 1/2 cup fresh parsley, chopped

  • 1/2 cup freshly grated Parmesan cheese

  • Optional: Red pepper flakes for a little heat

Directions 

1. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

2. Sauté the Vegetables:
In a large pan over medium heat, warm the olive oil. Add the chopped white onion and cook until translucent (about 3-4 minutes). Next, add the sliced mushrooms and cook for another 4-5 minutes until they soften.

3. Add the Cherry Tomatoes:
Gently place the cherry tomatoes into the pan and season with sea salt and black pepper. Let them cook for about 5 minutes until they start to soften and burst, releasing their juices.

4. Combine Everything:
Add the cooked pappardelle pasta to the pan, tossing everything together. If the pasta seems dry, gradually add some reserved pasta water to create a silky sauce.

5. Garnish & Serve:
Remove from heat and stir in fresh parsley and Parmesan cheese. Taste and adjust seasoning if needed. Serve immediately with an extra sprinkle of Parmesan and optional red pepper flakes.
