Trader Joe's Harvest Blend Recipe

Ingredients:

  • 1 package Trader Joe’s Harvest Blend, cooked according to package directions

  • 1 pack of Trader Joes tricolor cauliflower, chopped

  • 1 can chickpeas, drained and rinsed

  • 2 cloves fresh garlic (or use Trader Joes Minced Garlic)

  • A handful of fresh basil, chopped

  • A handful of baby portobello mushrooms, sliced

  • Trader Joe’s Vegan Creamy Dill Dressing (This is the sauce I have found to pair wonderfully with this meal, you could also swap for a mint yogurt sauce) 

  • Olive oil
  • Salt & pepper to tast

Trader Joe's Harvest Blend Recipe

Directions:

  1. Cook the Harvest Blend According to the package directions and set aside

  2. Sauté the Veggies.  In a In a large pan, heat olive oil over medium heat. Add chickpeas, and cauliflower and sauté for 5-7 minutes until lightly golden

  3. Next Toss in the baby portobello mushrooms, garlic and basil and cook for another 3 minutes until they soften

  4. Combine the harvest blend with the sautéd veggies 

  5. Once plated, drizzle with Trader Joe’s Vegan Creamy Dill Dressing or mint sauce over the top. Mix well. 

Bonus Points

  • If you like a little spice or heat, add some chili flakes to the plated dish for an added flavor kick. 
  • Keep the dressing separate to store this for up to 7 days in an air tight container.
